Method
- Set the Dutch oven on a level, fire-safe surface and organize ingredients before the lid gets hot.
- Brown or warm the base ingredients first, then add liquids and sturdy vegetables.
- Move to steady bottom heat and add a measured layer of coals on the lid if baking or simmering from above.
- Rotate the pot and lid every 10 to 15 minutes so one side does not scorch.
- Rest the dish briefly before serving; scrape, wipe, and re-oil cast iron while it is still warm.
